Doctored Cake Mix Chocolate Oreo Cupcakes

Y’all. I’m pretty proud of myself on this one! I threw an Owl-themed Baby shower a couple of weekends ago for a friend and I made these delicious cupcakes. They were a pretty big hit, so I thought I’d share them with you! Also, I don’t want to forget what I changed to make them so awesome ;).

If you’re throwing a party, shower, or just a fun get together and want a great dessert to make – these are so worth your time! They were pretty quick to make. I made 5 dozen over two hours, let them cool for a couple more hours and then whipped up the icing in no time!

For the cupcakes:

(Makes approx 36 cupcakes)

1 box chocolate cake mix
1 cup all-purpose flour
1 cup granulated white sugar
3/4 tsp salt
1 1/3 cup water
2 tbsp vegetable oil
1 tsp vanilla extract
1 cup sour cream (don’t go light on this – use regular!)
4 large eggs
1/3 cup cocoa

Directions:
1. Preheat oven to 325 F. Place cupcake liners in cupcake pans.

2. Whisk together cake mix, flour, sugar, and salt. Add remaining ingredients and beat with a mixer for 2 minutes, or until well blended. Batter should be fluffy.

3. Scoop batter into cupcake tins – fill about 2/3 full. Bake 18 minutes or until a toothpick inserted in the center comes out clean.

4. Allow to cool completely before icing.

For the icing:

1 cup butter (2 sticks), softened (NOT microwaved – must be softened over time)
4 cups powdered sugar
2 tsp vanilla extract
3-5 tbsp heavy whipping cream
Crushed Oreos
Mini Oreos to dress

Directions:
1. Beat softened butter on medium speed for 2-3 minutes until thoroughly whipped.

2. Add powdered sugar and mix on low until fully incorporated. I like to add this in stages.

3. Add vanilla extract and 3 tbsp heavy cream. Beat on medium-high for 3 minutes. Taste to see if you need to add more vanilla or sugar.

4. If frosting is too thick, add another tbsp heavy cream until desired consistency is reached.

5. Pipe frosting onto cupcakes, sprinkle on crushed Oreos and add a mini Oreo to dress it up!

These cupcakes have become my new go-to cake recipe! They were a great density, held a great moisture and the combination of icing with the cake was divine. It was hard not to eat all the leftovers in one sitting!
